Normally 4 to 7 lbs —This cut of meat requires braising to be tenderized. Braising involves cooking in a small amount of liquid on low heat for several hours which allows for tender, soft cooked meat. Serve with vegetables such as carrots, onions, celery, garlic and potatoes. Adding spices and broth will allow the most amount of flavor to soak into the meat over time.
